What You'll Need

- 3½ cups water
- 1 bottle (12 oz) of your favorite Wisconsin beer — a lager or amber works beautifully
- 1 cob Pops off the Cob Popcorn, freshly microwaved
- Optional toppings: shredded sharp cheddar, sliced green onions, a drizzle of hot sauce
Instructions
- Bring 3½ cups of water to a boil in a large soup pot.
- Slowly whisk in the Beer Cheese Soup Mix until fully combined.
- Add the 12 oz bottle of beer and return to a boil.
- Reduce heat and simmer for 15 minutes, stirring frequently, until thick and bubbling.
- While the soup simmers, pop your Pops off the Cob cob in the microwave per package instructions — it yields 4 to 6 cups of fresh, non-GMO popcorn.
- Ladle soup into bowls and top generously with fresh popcorn. Add cheddar, green onions, or hot sauce to taste.
