What You'll Need
For the Turkey
- 1 Tipsy Tom Beer-Brine Turkey Kit (includes brine mix, brining bag, and Cock-a-Doodle Brew honey ale rub)
- 1 whole turkey (up to 24 lbs)
- 1 can or bottle of your favorite beer (a honey ale or amber works beautifully)
- Water (per brine mix instructions)
- 2 tbsp butter or olive oil
For the Stuffing
- 1 bag Gluten-Free Sensational Stuffing Mix
- 4 tbsp butter
- 1½ cups chicken or vegetable broth
- ½ cup diced celery
- ½ cup diced onion
Instructions
Step 1: Brine the Turkey (24 Hours Ahead)
Combine the Tipsy Tom brine mix with your beer and water according to package directions. Place your turkey in the included BPA-free brining bag, pour the brine over the bird, seal it up, and refrigerate for 12–24 hours. The beer and brine work together to deeply season and tenderize the meat all the way to the bone — no more dry Thanksgiving turkey, ever.
Step 2: Prep and Rub
Remove the turkey from the brine and pat dry with paper towels. Generously coat the entire bird — including under the skin — with the Cock-a-Doodle Brew honey ale rub. Let it sit at room temperature for 30 minutes before roasting. The honey in the rub will caramelize into a gorgeous, golden-brown crust.
Step 3: Roast the Turkey
Preheat your oven to 325°F. Place the turkey breast-side up on a roasting rack. Roast uncovered, basting every 45 minutes with pan drippings, until the internal temperature reaches 165°F in the thickest part of the thigh (approximately 13–15 minutes per pound). Tent with foil if the skin browns too quickly. Rest for 20–30 minutes before carving.
Step 4: Make the Gluten-Free Stuffing
While the turkey rests, prepare the Gluten-Free Sensational Stuffing Mix. In a large skillet, melt butter over medium heat and sauté celery and onion until softened, about 5 minutes. Add broth and bring to a simmer. Stir in the stuffing mix, cover, and remove from heat. Let stand 5 minutes, then fluff with a fork. Season to taste.
Step 5: Serve and Celebrate
Carve your beautifully bronzed Tipsy Tom and serve alongside the stuffing. Don't forget to pour those rich pan drippings into a gravy boat — they're liquid gold after a beer brine.
Tips for the Best Tipsy Tom
- Beer choice matters — a honey ale, amber, or brown ale complements the rub's sweetness. Avoid very hoppy IPAs which can turn bitter.
- Don't skip the rest — letting the turkey rest after roasting keeps all those juices locked in when you carve.
- Make it ahead — the stuffing can be made a day in advance and reheated with a splash of broth to keep it moist.
- Gluten-free guests — the stuffing mix is the perfect solution for a fully inclusive holiday table without sacrificing flavor.
