Our Wisconsin 26 Roasted Garlic Pepper Spice does all the heavy lifting — delivering deep, savory garlic flavor with a perfectly cracked pepper kick in every bite. A hit of lemon zest brightens everything up, and the pan sauce? You'll want to put it on everything.
Ingredients
- 4–6 bone-in, skin-on chicken thighs
- 2 tablespoons Wisconsin 26 Roasted Garlic Pepper Spice
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- Zest of 1 lemon
- Fresh parsley for garnish
For the Pan Sauce
- 1 shallot, finely minced
- ½ cup dry white wine (or chicken broth)
- ½ cup chicken broth
- Juice of 1 lemon
- 2 tablespoons cold butter, cubed
- 2 cloves garlic, minced
- 3–4 sprigs fresh thyme
- 1 teaspoon Wisconsin 26 Roasted Garlic Pepper Spice
- Salt to taste
Instructions
- Preheat your oven to 425°F.
- Pat chicken thighs dry with paper towels — this is the secret to crispy skin.
- Drizzle with olive oil and rub generously with Wisconsin 26 Roasted Garlic Pepper Spice, salt, and lemon zest on all sides.
- Place skin-side up on a rimmed baking sheet or oven-safe skillet.
- Roast for 35–40 minutes until the skin is golden and crispy and the internal temperature reaches 165°F.
- Transfer chicken to a plate to rest. Place the pan over medium heat on the stovetop.
- Add shallot and garlic to the pan drippings and sauté 1–2 minutes until softened and fragrant.
- Pour in white wine and scrape up all the browned bits from the bottom — that's pure flavor. Add thyme sprigs and let reduce by half, about 2 minutes.
- Add chicken broth and lemon juice. Simmer another 2–3 minutes until slightly thickened.
- Remove thyme, then whisk in cold butter one cube at a time until the sauce is glossy and rich. Season with Roasted Garlic Pepper Spice and salt to taste.
- Spoon generously over chicken, garnish with fresh parsley, and serve immediately.
