Pumpkin Sugar Cookies with Pumpkin Spice Cane Sugar

Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ¼ cup Gustus Vitae Pumpkin Spice Cane Sugar, plus 2 tablespoons for topping
  • ⅓ cup canned pumpkin purée, measured after blotting (not pumpkin pie filling)
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1¾ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon fine salt

Directions

  1. Blot the pumpkin purée lightly with paper towels to remove excess moisture. Measure ⅓ cup after blotting.
  2. Beat the butter, granulated sugar and ¼ cup pumpkin spice cane sugar until light and creamy. Mix in the pumpkin, egg yolk and vanilla.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda and salt. Stir into the butter mixture just until combined.
  4. Cover and refrigerate for 1 hour.
  5. Heat the oven to 350°F. Line baking sheets with parchment.
  6. Scoop rounded tablespoons of dough, roll into balls and place about 2 inches apart. Flatten slightly and sprinkle with the remaining pumpkin spice cane sugar.
  7. Bake for 11–13 minutes, until the edges are set and the centers no longer look wet. Cool on the baking sheet for 5 minutes, then transfer to a rack.
