Ingredients
- 12 oz penne, rigatoni or your favorite pasta
- 2 tablespoons butter
- 1 tablespoon Burlap & Barrel Sun-Dried Tomato Powder
- 1 teaspoon Burlap & Barrel Toasted Onion Powder
- ¾ teaspoon Burlap & Barrel Purple Stripe Garlic Powder
- ¾ cup heavy cream
- ½ cup finely grated Parmesan, plus more for serving
- 1 cup reserved pasta cooking water, used as needed
- Salt and freshly ground black pepper, to taste
- Optional: chopped parsley or torn basil
Directions
- Cook the pasta in salted water according to its package directions. Reserve 1 cup cooking water before draining.
- Melt the butter in a large skillet over medium-low heat. Stir in the toasted onion and garlic powders for about 20 seconds, keeping the heat gentle so they do not scorch.
- Whisk the tomato powder with ½ cup reserved pasta water until smooth. Add to the skillet and simmer gently for 1 minute.
- Stir in the cream and simmer gently for 2–3 minutes.
- Reduce the heat to low. Add the drained pasta, then gradually stir in the Parmesan. Add more pasta water a splash at a time until the sauce coats the pasta.
- Taste before adding salt, since Parmesan and pasta water contribute saltiness. Finish with black pepper, extra Parmesan and optional herbs.
Kitchen Tips
For stronger tomato flavor, whisk another teaspoon of tomato powder with a little warm pasta water before adding it. Keep the heat low when adding Parmesan, and loosen the sauce with pasta water rather than letting it reduce too far.
For a vegetarian version, choose a Parmesan-style cheese made with vegetarian rennet.
