Buffalo White Chicken Chili

Serves 6–8 | Ready in 40 minutes

Ingredients

  • 1 packet Wisconsin 26 Hannah’s Hot Buffalo Seasoning Dip Mix
  • 2 lbs shredded chicken (rotisserie works great)
  • 2 cans (15 oz each) white beans (cannellini or Great Northern), drained
  • 1 can (4 oz) diced green chiles
  • 3 cups chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp butter or olive oil
  • 4 oz cream cheese, cubed
  • ½ cup hot sauce (Frank’s RedHot recommended)
  • ½ cup sour cream
  • Salt and pepper to taste

For topping: shredded Monterey Jack or cheddar, blue cheese crumbles, extra sour cream, sliced green onions, crushed crackers or tortilla chips

Instructions

  1. In a large pot over medium heat, sauté onion in butter until softened, about 4 minutes. Add garlic and cook 1 minute more.
  2. Add shredded chicken, green chiles, and Hannah’s Hot Buffalo Seasoning packet. Stir to coat.
  3. Pour in chicken broth and hot sauce. Add white beans and bring to a simmer.
  4. Cook uncovered for 20 minutes, stirring occasionally.
  5. Reduce heat to low. Stir in cream cheese cubes until fully melted, then stir in sour cream until smooth and velvety.
  6. Taste and adjust heat with additional hot sauce or salt as needed.
  7. Ladle into bowls and pile on your toppings.

Slow cooker version: Add all ingredients except cream cheese and sour cream to the slow cooker. Cook on LOW 6–8 hours or HIGH 3–4 hours. Stir in cream cheese and sour cream in the last 30 minutes.
