Share
These BLT Dip Stuffed Cucumber Rounds are the appetizer that stops the room. Fresh cucumber slices hollowed into little cups and filled with a creamy, bacon-and-tomato-packed BLT dip — they’re cool, crunchy, and completely addictive. No baking, no fuss, and they look like you spent way more time than you did. Perfect for a fall party spread, game day snack board, or any gathering where you want to impress without the stress.
The filling is made with Carmie's BLT Dip Mix — a classic BLT combo packed with bacon, tomato, cheddar, and a hint of garlic. Just mix with sour cream and mayo and you’ve got a dip so good people will be asking for the recipe all night.
Ingredients
- 1 packet Carmie's BLT Dip Mix
- 1 cup sour cream
- 1 cup mayonnaise
- 2–3 large English cucumbers
- Optional garnishes: crumbled cooked bacon, halved cherry tomatoes, fresh chives or parsley, a pinch of smoked paprika
Instructions
Step 1: Make the BLT Dip
Stir the BLT Dip Mix into the sour cream and mayonnaise until fully combined. Cover and refrigerate for at least 30 minutes — or up to 24 hours ahead. The flavors deepen beautifully as it chills, making this a perfect make-ahead appetizer.
Step 2: Prep the Cucumber Cups
Slice the cucumbers into 1-inch rounds. Using a small melon baller or a teaspoon, scoop out a shallow well in the center of each round — deep enough to hold the filling but not all the way through. Pat dry with a paper towel so the filling stays put. Arrange on a serving platter.
Step 3: Fill and Garnish
Spoon or pipe the BLT dip generously into each cucumber cup. Garnish with a small piece of crumbled bacon, a halved cherry tomato, and a sprinkle of fresh chives for a picture-perfect finish. A tiny pinch of smoked paprika on top adds a beautiful color pop.
Step 4: Serve
Arrange on a platter and serve immediately, or refrigerate for up to 2 hours before serving. These hold up beautifully and look stunning on any spread.
Build a BLT Appetizer Board
Make a double batch of the BLT dip and serve the stuffed cucumber rounds alongside a bowl of extra dip with potato chips, pretzels, and toasted baguette slices. Add a cluster of cherry tomatoes and some crispy bacon strips for a full BLT-themed appetizer board that’s as beautiful as it is delicious.
Tips & Variations
- Make ahead — prep the dip up to 24 hours in advance and fill the cucumbers up to 2 hours before serving for the freshest result.
- Lighter version — substitute 2 cups plain Greek yogurt for the sour cream and mayo for a lighter but equally creamy filling.
- Cheeseball option — mix the BLT Dip Mix into 16 oz softened cream cheese, roll into a ball, coat in crumbled bacon, and serve alongside the cucumber rounds for a stunning centerpiece.
- Seasoning twist — use the BLT mix as a seasoning — stir into mac & cheese, sprinkle over baked potatoes, or mix into burger patties for a BLT-flavored bite.
- Swap the vessel — use endive leaves, mini bell pepper halves, or toasted baguette rounds instead of cucumbers for a different presentation.
