Pumpkin Spice Sugar Apple French Toast Bake

Warm apples, golden bread, and a crunchy pumpkin-spice sugar top make this a fall breakfast worth getting up for. Gustus Vitae Pumpkin Spice Cane Sugar sweetens the custard and gives the top a little sparkle. Lady May’s Pure Vanilla Extract rounds out the custard. Assemble it the night before, then bake it while the coffee brews.

Ingredients
- 1 loaf (about 14–16 oz) day-old brioche or challah, cut into 1-inch cubes
- 2 medium apples, peeled if desired and cut into 1/2-inch pieces
- 6 large eggs
- 2 cups whole milk
- 1/2 cup heavy cream
- 4 tbsp Gustus Vitae Pumpkin Spice Cane Sugar, divided
- 1 tsp Lady May’s Pure Vanilla Extract
- 1/4 tsp kosher salt
- 2 tbsp unsalted butter, melted
- Plain yogurt or maple syrup, optional for serving
Directions
- Butter a 9-by-13-inch baking dish. Spread half the bread cubes in the dish, scatter over the apples, and top with the remaining bread.
- Whisk the eggs, milk, cream, 3 tablespoons Pumpkin Spice Cane Sugar, Lady May’s Pure Vanilla Extract, and salt until combined. Pour evenly over the bread. Press the bread down gently so it absorbs the custard. Cover and refrigerate for at least 1 hour or overnight.
- When ready to bake, heat the oven to 350°F. If the dish has been refrigerated overnight, let it stand at room temperature while the oven heats. Drizzle the melted butter over the bread and sprinkle with the remaining 1 tablespoon Pumpkin Spice Cane Sugar.
- Bake uncovered for 40–50 minutes, until the top is golden, the center is set, and a thermometer inserted into the middle reads 160°F. If it browns too quickly, tent loosely with foil.
- Rest for 10 minutes before slicing. Serve warm, with yogurt or maple syrup if you like.
Make-ahead tip: The overnight soak gives the bread time to absorb the custard. Bake it in the morning rather than baking it the day before for the best golden top.
