What You'll Need
- 4 large russet potatoes
- 1 packet Bacon Horseradish Dry Dip Mix
- 4 tablespoons butter, softened
- 1/2 cup sour cream
- 1/4 cup whole milk or cream
- 1 cup shredded sharp cheddar cheese, divided
- 4 strips bacon, cooked and crumbled
- 2 green onions, thinly sliced
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F. Scrub potatoes, prick with a fork, rub with oil and salt, and bake directly on the oven rack for 55–65 minutes until tender throughout.
- Let cool for 10 minutes. Slice each potato in half lengthwise and scoop the flesh into a large bowl, leaving a 1/4-inch shell intact.
- Add butter, sour cream, milk, and the full packet of Bacon Horseradish Dry Dip Mix to the potato flesh. Mash until smooth and creamy.
- Fold in half the cheddar and half the bacon crumbles. Season with salt and pepper.
- Spoon the filling back into the shells, mounding generously. Top with remaining cheddar and bacon.
- Return to the oven at 375°F for 20–25 minutes until golden and bubbling.
- Garnish with green onions and serve immediately.
